Using Leftover Lamb Roast

  • Fry minced garlic & sliced onions until soft. Add tinned diced tomatoes, diced lamb, and sliced black olives & any herbs (optional), mix together until hot then serve with mashed potato and peas.
  • Or cook as above and then stir through cooked spiral pasta and top with grated tasty cheese and place under griller until cheese has melted. Served with a greek salad (diced grape tomatoes, rocket or baby spinach leaves, marinated fetta cheese, sliced black olives and thinly sliced red onion)
  • Make a whole grain sandwich with sliced lamb, homemade tomato chutney, thinly sliced cheese and rocket leaves.
  • Add diced or shredded lamb to spaghetti bolognaise sauce then serve on thinly cooked spaghetti pasta, sprinkled with parmessan cheese and black pepper.
  • Slice or dice lamb, add onion gravy and sliced cooked mushrooms or diced champignon's and place in pie dish and top with puff pastry and cook in oven until pastry cooked. Serve with mash potatoes and homemade tomato chutney.
